Take a slice of dried beef and spread a thin, even layer of softened cream cheese all over its surface. Don't be shy with the cream cheese!
Place a small dill pickle at one end of the cream-cheese-covered beef. Gently but tightly roll the beef and cream cheese around the pickle until you have a nice little log.
Using a sharp knife, slice the roll-ups into bite-sized pieces (about 1 inch thick). Arrange them on a plate and get ready to enjoy your dill-icious creation!
